I need to build a flat rectangular trimesh where each vertex has its own color, to get interpolated colors on the whole plane. I need to look at this plane just from above. Is there a simple way to force the rectangle to have a predetermined size in pixels, playing with scale, camera position, view angle and whatever?

Yes; see the section of the Rb3D FAQ on making sprites. This shows you how to configure the Rb3D camera so that 1 unit of world space equates to 1 pixel on the screen, and the direction of the axes match standard 2D drawing.
