Reasonably well; the difficulties with a game like that are in (a)
the programming, and (b) the artwork. Remember, those games were
both developed by a couple dozen developers and artists, with a
budget of millions of dollars per year for several years. REALbasic
makes development easier, but not so easy that one person is going to
make something comparable to those in his evenings and weekends.

Yes, export all the items in the project to external files (in XML
format if you prefer), and then use something like CVS or Subversion.
