FWIW I have an app on MAS called Synapse that does, as far as I know, just about all the legwork of beating a RS binary into 'submission' (or ready for submission). So far, the only caveat is you must should have Xcode 3.2.x to avoid issues when using Apple's Application Loader 1.4.1. As mentioned elsewhere, Apple will likely find something to nitpick about; so having Synapse control post-processing simply and repeatably, removes one recurring hassle out of the review equation. I've used Synapse to successfully submit several versions of itself and other RS-made apps to the MAS.
